Mixed Vegetable Soup - Post From A Reader

Hi friends today I have a non-blogger Shafeeka who is going to share a yummilicious treat with us. Am sure all of you must have come across her recipe earlier at my space, Egg rasam and she got good responses too. I tried her egg rasam and it was too good. Today Shafeeka is going to share with us a very delectable  and tasty vegetable soup that is served to pregnant women and breastfeeding moms. It looks so delicious, the flavors added must make it taste really good and moreover seems like a very easy one too, I will be trying this very soon. Mixed Vegetable Soup

INGREDIENTS

  1. Carrots (chopped) -1/4 cup 
  2. French beans(chopped) - 1/4 cup
  3. Potato(chopped) - 1/4 cup p
  4. Onion(chopped) - 1/2 cup
  5. Tomato(chopped) - 1/4 cup 
  6. Ginger garlic paste - 1½ tsp
  7. Green Chillies - 2 (optional)
  8. Tiny cinnamon stick
  9. Cloves - 2
  10. Pepper powder -1 tbsp
  11. Jeera powder - 3/4th tbsp
  12. Turmeric powder -1/2 tbsp
  13. Coriander powder - 1 tbsp
  14. Few Mint coriander leaves
  15. Few curry leaves
  16. Oil - 3-4 tsp 
  17. Salt - As per need
  18. 3 glasses of water

PREPARATION METHOD

  • Place a pressure cooker pan on flame, add oil. 
  • After it heats up add ginger garlic paste and saute well. 
  • Then add chopped onion, tomato, carrots, potato, peas and saute. 
  • Now add cumin powder, pepper powder, coriander powder, cloves, cinnamon stick.
  • You  can add green chillies too if you wish.
  • Mix well and add water with salt.
  • Close the cooker with a lid and pressure cook for 1 whistle. 
  • Set aside and open after the pressure has released. 
  • Then open the lid and boil for 3 to 5 minutes.
  • Garnish with mint and coriander leaves.
  • Serve hot!

This soup is given specifically in my village for pregnant 
women and breastfeeding mothers 
as it is rich in nutrients.
This soup is added to well cooked rice,mashed 
and served.
